Pumpkin Spice Vanilla Shake

Pumpkin spice season, protein edition. This creamy shake tastes like a pumpkin pie milkshake, takes five minutes and has 19g of plant protein from the scoop. Add a shot of espresso and it turns into a pumpkin spice latte you can drink on the way out the door.
Frozen banana makes it thick and frosty without a pile of ice, and Vanilla MycoProtein blends in smooth, with no chalky aftertaste.
Why you’ll love it
- Five minutes, one blender. Toss it all in and blend.
- Coffee-shop flavor at home. All the pumpkin spice, none of the line.
- Breakfast or post-workout. 19g of plant protein from the scoop makes it more than a treat.
Our pantry picks
- Pumpkin: We use Libby’s 100% Pure Pumpkin. It’s just pumpkin, nothing else, so you control the spice and sweetness.
- Espresso: We like Lavazza Super Crema. It’s smooth and a little nutty, and it pairs perfectly with pumpkin and vanilla.
Tips and swaps
- Use plain pumpkin purée, not pumpkin pie filling, which already has sugar and spice in it.
- No espresso machine? Use 1/4 cup of strong brewed coffee or cold brew, chilled.
- Too thick? Add a splash more milk. Too thin? Add a few more ice cubes.
- Want it sweeter? Add a drizzle of Lakanto Classic Maple Syrup.
